An old recipe from León.

Ferro begins with a way of pressing thin cookies on a hot engraved iron, carried down from Sahagún in northern Spain. We kept the method and the patience.

Pressed one at a time.

Not baked on a tray — each cookie is pressed between engraved irons, so it comes out thin, shatter-crisp, and marked with its own pattern.

Made in small runs.

Never mass-produced. Cookies are pressed in small batches, so what reaches you is fresh — not sitting in a warehouse.

A tin you keep.

Sealed in a collectible embossed tin made to live on your counter. When it empties, refill it — keep the tin, keep going.
